Autumn Pizza Recipe šŸ‚

Fall has got me in the feels this year and I am not entirely sure why! I’m loving all things fall. I’ve got my cinnamon, vanilla essential oils diffusing and I’m putting cinnamon on everything!

Today we are making a 3 ingredient simple pizza crust with sweet potato! For the toppings we’ve got heirloom tomatoes, mushrooms, butternut squash roasted, spinach, onion and goat cheese. Eek!

Let’s start with the crust. Super simple!
What you’ll need: – 1 medium sweet potato, 2/3 cup gluten free flour, 1 egg.

Directions for the pizza crust: wash sweet potato and poke holes in it with a knife or fork. Microwave it for 3-4 minutes on a lower power. (If a fork goes through it, it’s done!)

Scoop out the insides of the potato and put in medium bowl, add gluten free flour and crack your egg. (I add a little salt and pepper) then mix mix mix! It gets a little sticky and that’s good. With your hand mold it into a ball. Dust a little flour on the counter and put down your dough ball and dust flour on top. Flatten it out and make a round shape.

Put on a baking sheet and bake for 25 mins on 400 degrees. Take it out and flip to the other side. Put toppings on the browned side so the bottom can get browned too.

While that is going let’s work on the toppings! Wash and peel butternut squash. Cut into cubes and place in a baking dish with olive oil. I like onion too so I long cut some onion and add to it. Add salt/pepper. Bake for 30 mins on 400 degrees.

Then assemble your pizza!
What you’ll need:

  • roasted butternut squash and onion mixture
  • mushrooms
  • spinach
  • heirloom tomatoes
  • minced garlic
  • pepperoni
  • and I like goat cheese. Goat cheese is lactose free but don’t go nuts! (Vegan cheese works great too. We just need to hold our toppings on)

Put your toppings on in your own fashion and bake for 15 mins on 415 degrees. I do the last 5 mins on broil to get the browned bubbling effect.
